The annual burying of the beef event, started in 1977 by the University's former athletic trainer and assistant professor of health and physical education, Bill Joy, brings together alumni and friends who contribute $500 or more every year to the ENMU Foundation. This year's event, hosted by Chancellor and First Lady Johnston, brought together alumni and friends on June 7, 2025, to the President's shop to celebrate another successful year for the ENMU Foundation.
